At Oak & Willow Honey Company, we believe exceptional honey begins with healthy bees, thriving wildflowers, and the patience to let nature lead the way.
Every jar produced starts as a local polyfloral honey, created as our bees gather nectar from the diverse wildflowers, blossoms, and trees that flourish throughout our region. This natural diversity gives our honey its beautifully balanced flavour, delicate floral notes, and the unique character that changes subtly with each season.
Our honey is raw, unpasteurized, and never heated, preserving its natural qualities from hive to jar. Rather than filtering away the finest particles, we carefully strain our honey to remove wax and larger debris while retaining naturally occurring pollen and many of the valuable compounds found in raw honey, including polyphenols, phytonutrients, antioxidants, enzymes, amino acids, trace minerals, and vitamins.
Our artisan-infused collection is crafted with the very same philosophy. Every infusion begins with our raw local honey and is cold infused over several days or weeks, allowing carefully selected herbs, botanicals, fruits, and spices to gently release their flavours without exposing the honey to heat. We use only real, natural ingredients—never artificial flavours, colours, preservatives, or additives—creating distinctive honeys that celebrate both the richness of nature and the artistry of traditional craftsmanship.
